Nestled in the vibrant community of Oceanport, New Jersey, Birdsmouth Beer has made a name for itself in the craft beer scene.
It all began when Andy Gioia, decided to turn his hobby into a career. Leaving his home-brew equipment behind he worked his way up the beer industry ladder as a keg washer, cellerman and eventually became head brewer at Ocean Township’s Kane Brewing for 6 years.
A graduate of the American Brewer’s Guild, Andy decided he wanted to branch out and have his own team. He sought advice from his long-time friend Rocco Laginestra and the more they talked, the more they realized they were on the same page. Together, they founded Birdsmouth Beer.
The name comes from a carpentry term for a wood joint used to join building materials together, intended to symbolize its owners’ goal of brewing lagers that do the same for people. New Jersey pride is prominently displayed in their logo which features the state bird – the Goldfinch.
Laginestra’s previous career was as a commercial real estate broker, his contacts gave them a leg up on finding the perfect space at just the right time.
A former Army base Commissary was being revitalized and made commercially available which suited their purposes perfectly. They leased a 12,080-square-foot space, converting it into a production facility and tasting room with bar and seating areas, games and an outdoor patio. The brewery’s tasting room offers a cozy and inviting atmosphere where visitors can learn about the brewing process, the ingredients used, and the story behind each beer.
“I’ve always been intrigued by Fort Monmouth and love the area,” Gioia said. “I like that the Commissary was a communal place to get groceries. It’s important to keep the history.
We’re trying to keep that spirit alive. My grandfather was a sergeant in the U.S. Army, so it has a personal connection for me and my family.”

While many craft breweries in the region focus on a wide variety of beer styles, Birdsmouth Beer has honed in on perfecting lagers. This focus sets them apart, as lagers require longer fermentation times and more precise temperature control, making them a challenging yet rewarding beer to brew.
They ordered a 15-barrel, 3-vessel system from Specific designed for easy step-mashing, essential for North American-style lagers.
They focus on providing fresh beer by only distributing in New Jersey, working with their partners to ensure it is served the way it was intended.
Both Andy and Rocco pride themselves on being community-centric.
They frequently host events, from brewery tours to beer tastings, creating a welcoming space for beer enthusiasts to gather and share their love for craft brews.
